Chris Dearden of Benessere discusses structure in Sangiovese and offers tastings demonstrating co-pigmentation via oak fermentation and the effects of "surleis" bātonage.

Tom Rinaldi of Provenance demonstrates alcohol sweet spots in Cabernet Sauvignon.

Craig Williams shows the use of oxygen to refine structure in Cabernet Sauvignon and will present some deficit irrigation trials for a select group of Masters of Wine and Master Sommeliers.
